Breakfast Grilled Cheese Eggo® Sandwiches

These loaded, 5-ingredient sandwiches feature veggie bacon strips, melty Cheddar, and tomato slices stacked between waffles. Griddled to crisp, buttery perfection, they’re the best way to rise and shine for breakfast or lunch.

Ingredients

> 4 strips Morningstar Farms® Veggie Bacon Strips
> 4 Eggo® Homestyle Waffles
> 1 tbsp unsalted butter, softened
> 4 slices sharp Cheddar cheese
> 1 Roma tomato, sliced

Heat a 10-inch nonstick skillet on medium. Arrange veggie bacon strips in a single layer. Cook 8–10 min. on low to medium, until crisp, flipping occasionally. Meanwhile, toast the waffles. Spread one side of each waffle with the butter.

Put waffles, buttered-sides down, on a cutting board. Top each of 2 waffles with 1 Cheddar slice, 2 strips veggie bacon, 2 tomato slices, and then 1 Cheddar slice. Season with salt and pepper. Top with remaining waffles, buttered-sides up.

Heat same skillet on medium-low. Cook sandwiches 4–5 min., until cheese has melted and waffles are crisp, flipping halfway through.
