Ingredients

> 1/2 cup chia seeds
> 1 cup low-fat milk or plant-based milk
> 1 cup store-bought cold brew coffee (not concentrate)
> 2 tbsp honey or maple syrup (optional)
> 1 tsp vanilla extract
> 1 1/2 cups non-fat vanilla Greek yogurt, divided
> Unsweetened cocoa powder, for dusting

In a medium bowl, whisk together the chia seeds, milk, cold brew, honey or maple syrup (if using), and vanilla. Cover and refrigerate overnight, until thickened.
