Avocado Fries

Who needs potatoes when you have creamy, nutrient-packed avocados? Serve these oven-baked fries with burgers or on their own as a snack.

Ingredients

> 2 avocados
> 2 large eggs
> 1 cup flour
> 1 cup panko bread crumbs
> 1/2 cup Parmesan
> cooking spray
> 2 tbsp mayonnaise
> 2 tbsp Greek yogurt
> 2 limes
> 1 tsp Sriracha

Preheat oven to 400°F. Coat a large baking sheet with the cooking spray. Halve, peel, and pit the avocados. Cut each half lengthwise into 4 wedges.

In a shallow bowl, whisk the eggs. Place the flour and panko into 2 separate plates. Stir the Parmesan cheese into the panko until well combined.

Dip one piece of avocado into the flour and then into the egg, allowing excess to drip off. Add to the panko mixture, tossing and pressing to coat completely. Place on a greased baking sheet. Repeat with remaining avocado. Generously spray avocado with cooking spray and bake 12–15 min., until golden brown.

Meanwhile, grate 1 tsp zest and juice 1 tbsp juice from the limes. In a small bowl, whisk together the mayonnaise, Greek yogurt, lime juice, lime zest, and sriracha. Serve avocado fries with dipping sauce.
