Apple Pie Filling

4 medium apples, cored, and diced

4 tbsp lemon juice (about 1 lemon)

2 tbsp brown sugar

2 tbsp all purpose flour
>
2 tbsp maple syrup
>
2 tsp cinnamon
>
1 tsp apple pie spice
Batter
>
1 cup sugar
>
2 1/4 cup all purpose flour
>
4 tsp baking powder
>
1 tsp cinnamon
>
1/2 tsp salt
>
1/2 cup unsalted butter
>
1 egg
>
1 cup milk
>
1/4 cup sour cream
Streusel Topping
>
6 tbsp all purpose flour
>
5 tbsp brown sugar
>
4 tbsp unsalted butter, cubed
>
1/2 cup pecans
>
1 tsp cinnamon
Apple Pie Filling

Dice apples into small cubes, add lemon juice, and mix in a large bowl until evenly coated.

Add brown sugar, flour, maple syrup, cinnamon, and apple pie spice. Mix until combined.

In a large saucepan, heat ingredients over medium heat for 15-20 minutes until apples are soft. Remove from heat, and let cool.
Muffin Batter

Preheat oven to 425°, and generously grease a muffin pan

In a large bowl, mix flour, sugar, baking powder, cinnamon, and salt.

In a small saucepan, melt butter over medium heat, and stir on low until light brown.

In a medium bowl, beat egg until fluffy. Add melted butter, and whisk until combined. Then, add milk and sour cream, and whisk until smooth.

Add butter mixture to dry ingredients, and lightly mix. Add apple pie filling, mix until fully incorporated, and set aside.

Combine all streusel topping ingredients in a small bowl. Mix together with a fork until butter is smooth.

Fill each muffin tin with batter, and top with 1 tbsp. of streusel topping.

Bake at 425° for 5 minutes, then reduce heat to 350° and bake for 15 more minutes.

Remove from oven, and let cool completely before removing them from the pan.
