Air-Fried Beet Chips

This homemade version of a store-bought treat transforms a simple root vegetable into a crunchy, nutritious snack that’s great anytime.

> 2 medium beets
> 2 tbsp olive oil
> 1 tsp chili powder
> 1/2 tsp onion powder
> 1/4 cup blue cheese dressing


Preheat air fryer to 330°F. Peel the beets and, using a mandoline, very thinly slice. Add to a medium bowl along with the oil, chili powder, and onion powder. Toss to coat.
In batches, arrange beet slices in air fryer basket, overlapping slightly. Close lid and cook 12–16 min., until mostly crispy and browned, shaking basket and separating beets every 5 min.
Transfer to a paper towel–lined plate and let cool 5 min. Season with salt to taste. Serve with the blue cheese dressing for dipping.
