6 fresh apricots

1 pint raspberries

Pit and dice the apricots and set in a large pot with the raspberries, sugar, lemon juice, and ½ cup water. Bring to a boil, stirring occasionally and reduce to a rapid simmer. Allow fruit compote to simmer for 20 min. or until liquid is reduced and a syrupy compote is formed. For best results, allow fruit compote to cool fully before storing in the refrigerator.
