Ingredients

> 1 1/4 cups all-purpose flour
> 1/2 tsp salt
> 2 tsp sugar
> 8 tbsp (1 stick) unsalted butter, cut into small cubes and very cold
> 4 - 5 tbsp ice water

Steps

1
In a food processor, pulse the flour, salt, and sugar to combine. Add half of the butter (placing remaining butter in freezer). Pulse until butter is cut into pea-size crumbs. Add remaining butter and pulse until butter is crumbly.
2
Drizzle 3 tbsp ice water over flour mixture. Pulse to combine. Continue adding ice water 1 tbsp at a time, pulsing in between, until mixture holds together when squeezed.
3
Transfer to a bowl and gently pat together into a ball. Wrap in plastic wrap and flatten into a disk. Refrigerate at least 45 min. or up to 2 days before rolling.

Tips

This dough can be wrapped in 2 layers of plastic and frozen for up to 2 months. One day before rolling, thaw in refrigerator.
