Preheat the oven to 375°F. Thinly slice the steak and add to a large bowl along with the fajita vegetables, oil, and fajita seasoning mix. Season with salt and pepper. Toss to combine.

Distribute steak and vegetables among 4 (12x12-inch) sheets of heavy-duty foil. Fold sides of foil up around mixture. Roll tightly to seal. Place on a rimmed baking sheet. Bake packets for 12 min.

Meanwhile, halve, remove pit, and dice the avocado. Carefully open packets. Serve beef and vegetables in the tortillas, topped with avocado and desired toppings.
Tips
Reduce or increase baking time based on steak temperature preference.
