2 cups fresh mixed berries

1 tbsp sugar (optional)

1 large egg

2 tbsp olive oil

3/4 cup low-fat milk

1 1/2 cups Nature's Promise® Gluten Free Pancake and Waffle Mix

Cooking spray

Whipped cream, for garnish

Hull and thinly slice the strawberries, if using. To a cutting board, add about ½ cup mixed berries and gently smash with a fork. Place in a medium bowl with remaining berries, sugar if desired, and 2 tbsp water; toss to combine.

In a large bowl, whisk together the egg, olive, and milk until well combined. Add the pancake mix and stir until just combined (some lumps are okay).

Spray a 12-inch nonstick skillet or griddle with the cooking spray and heat on medium-high. Add ¼-cup scoops of batter to skillet and cook 1–2 min., until edges begin to set and bubbles start to form. Flip pancakes and cook 1 min., until bottoms are golden brown. Repeat until all pancakes are made. Serve pancakes with berry mixture and whipped cream.
