Broccolini with Bacon and Thyme

Instead of green bean casserole, try this with your turkey dinner.

> 2 bunches broccolini, ends trimmed
> 4 slices bacon
> 1 tsp dried thyme leaves
> 1 tbsp olive oil


Preheat oven to 400°F. Bring a pot of water to the boil and cook broccolini 2 min, or until tender crisp. Drain and divide into 4 portions.
Wrap each portion with 1 slice of bacon and place in a 9x13 inch greased baking dish. Sprinkle thyme and oil over the broccolini.
Bake 8-10 min., watching carefully so bacon doesn’t burn.


If you have fresh thyme, strip the leaves from 3 sprigs and use instead of dried. This is good served warm or at room temperature. You can make this dish one day ahead through step 2. Store covered in the refrigerator.
