40 -45 saltine crackers

1/2 cup (1 stick) butter, cut into pieces and room temperature

1/2 cup granulated sugar

1/2 cup packed light brown sugar

2 tsp vanilla extract
>
pinch of salt

2 tbsp apple cider vinegar

1/2 cup dark chocolate chips
>
1/2 cup white chocolate chips

Line a rimmed baking sheet with foil and coat with the baking spray. Arrange the saltine crackers in a single, solid layer on the baking sheet, breaking to fit if necessary.

In a large microwave-safe bowl, microwave the butter on high 1 min., until melted. Whisk in the granulated sugar, brown sugar, extract, salt, and vinegar until smooth. Microwave on high, uncovered, 6 min., in 2-min. intervals, whisking thoroughly in between. Microwave 1–2 min. more, until slightly more amber in color, checking every 30 sec.

Whisk caramel, then carefully pour over crackers, spreading to cover them completely. Tap pan gently. Let stand until caramel hardens.

Meanwhile, in a small microwave-safe bowl, microwave the dark chocolate chips in 30-sec. intervals, until melted, stirring in between intervals. Dollop dark chocolate over caramel. Repeat melting with the white chocolate chips. Dollop over caramel.

With tip of paring knife or skewer, swirl chocolates together over surface of caramel. Refrigerate until chocolate sets. Break into bite-size pieces and package immediately or store in an airtight container.
