1 small head green cabbage

Into a large bowl, zest and juice the lemon. Whisk in the mustard and oil until combined.

Shred the cabbage and thinly slice the celery. Add cabbage, celery, and cranberries to the dressing and toss to combine. Season with salt (in moderation) and pepper.
