1/2 cup chicken broth

1 (10.5 oz) can cream of chicken soup

1/2 cup California walnuts

1 (2.6 oz) pkg fresh spinach

1/2 cup dried cranberries

1/2 cup light vinaigrette

crumbled goat cheese, for garnish

Prepare couscous according to package directions less 5 minutes of indicated cook time.

Combine couscous, chicken broth, chicken, and cream of chicken soup. Cook over medium heat until warmed through, about 5 minutes.

Serve atop spinach with walnuts, dried cranberries, and goat cheese tossed in light vinaigrette.
Tips
• Blend the chicken broth and cream of chicken soup to make the sauce the perfect thickness.
• Add additional vegetables for added nutrition.
