Ingredients

1 tbsp vegetable oil

1 lb boneless skinless chicken breasts, cut into thin strips

1 (12 oz) pkg fresh vegetables fajita blend

2 tsp garlic powder
>
1 tbsp chili powder
>
2 tsp cumin
>
1 qt low sodium chicken broth
>
1 (15 oz) can fire roasted tomatoes
>
1 (29 oz) can white hominy

Preheat a large Dutch oven or pot with a lid over medium high heat.

Add the oil, sliced chicken breast, fajita vegetables, garlic, chili powder and cumin to pot. Cook for 4-5 minutes until lightly browned.

Add the diced tomatoes, beans, hominy, and chicken broth. Bring liquid to a boil, and reduce to medium heat. Simmer for 15-20 minutes.
