1 (8.8 oz) pkg Nature's Promise® Precooked White Quinoa

1 pint grape tomatoes

1 English cucumber
>
1/2 small red onion
>
2 tbsp olive oil, divided
>
1 tbsp red wine vinegar
>
2 cups shredded cooked or rotisserie chicken
>
1 tbsp garam masala or curry powder
>
1 (8 oz) pkg Nature's Promise® Traditional Hummus
>
Pitas, to serve (optional)

Microwave the quinoa according to package directions. Meanwhile, halve the tomatoes and chop the cucumber and onion. In a medium bowl, combine vegetables, 1 tbsp oil, and vinegar. Season with salt and pepper.

In a microwave-safe bowl, combine the chicken, garam masala, and remaining 1 tbsp oil. Season with salt and pepper. Microwave until warm, 1–2 min.

Divide the quinoa among 4 bowls. Top each with a dollop of the hummus. Top with tomato salad on one side of each bowl and chicken on the other side. Serve with the pitas, if desired.
