4 slices bacon, finely chopped

1 cup dark chocolate chips

1 tbsp coconut oil

48 wavy potato chips

Line 2 rimmed baking pans with parchment paper. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate.

In small microwave-safe bowl, heat chocolate chips and oil in microwave oven on high 1 minute 30 seconds or until melted, stirring every 30 seconds.

Working with 1 potato chip at a time, dip potato chips halfway into chocolate mixture to cover 1/2 of the potato chip, allowing excess to drip off; place on prepared pans and immediately sprinkle chocolate with toffee bits and bacon. Refrigerate 10 minutes or until chocolate is hardened; store potato chips in airtight container at room temperature up to 1 week. Makes 48 dipped potato chips.
