> 1 (12 oz) bag SteamReady broccoli, corn, carrots, cauliflower, and red pepper
> 1 red onion
> 2 tbsp olive oil
> 1 cup shredded white Cheddar
> 1 (12 oz) pkg cod fillets, thawed if frozen

Steps

1
Move an oven rack to the top third of the oven and preheat broiler. Prepare the vegetables in the microwave according to package directions. Cut the onion into rings.
2
While vegetables cook, heat 1 tbsp oil in an oven-proof skillet and fry the onion for 3 min. over high heat. Season with salt and pepper. Remove from heat and mix in a bowl with the cheese. Pat cod dry and cut into 4 even pieces. Sprinkle with salt and pepper. Heat remaining 1 tbsp oil in the skillet and cook the fish 4 min., or until almost cooked through. Flip fillets halfway through cook-time.
3
Top cod with the cheese-onion mixture and broil for 3 min. or until cheese begins to bubble. Divide the vegetables and cod among 4 plates and serve.
