Cold Soba Salad with Salmon and Broccoli

Cooking the teriyaki salmon in the microwave for this noodle salad is a fuss-free technique for steaming fish in a flash.

Ingredients

> 12 oz soba noodles
> 1 cup Nature's Promise® Organic Shelled Edamame
> 1 (10 oz) pkg Nature's Promise® Organic Fresh Vegetables Broccoli Florets
> 12 oz salmon fillets
> 4 tbsp Nature's Promise® Sesame Teriyaki Marinade, divided
> 2 green onions
> 3 tbsp rice vinegar
> 2 tbsp sesame seeds
> 1/4 cup fresh cilantro leaves

Cook the soba noodles according to package directions. Add the edamame and broccoli to boiling water 2 min. before noodles are done. Transfer mixture to a colander and rinse with cold water. Drain well.

Meanwhile, arrange the salmon fillets in a microwave-safe baking dish. Brush with 2 tbsp teriyaki marinade. Season with salt and pepper. Cover and microwave 4 min., until cooked through.

Thinly slice the green onions. In a large bowl, whisk remaining 2 tbsp teriyaki, vinegar, and sesame seeds. Add noodles and green onions. Toss to coat. Remove and discard skin from salmon. Break salmon into bite-size pieces and place on top of noodles. Garnish with cilantro.
