Ingredients

1 (2.1 oz) pkg fully cooked bacon

1 red bell pepper, divided

1 cup part-skim ricotta cheese

4 oz reduced-fat cream cheese, room temperature

1/4 tsp garlic powder
>
1/4 cup chopped fresh chives
>
4 (9-inch) spinach wraps
>
1/2 pint grape tomatoes

Microwave the bacon according to package directions and let cool. Halve the bell pepper and remove seeds. Using a star cookie cutter, cut out a star shape from bell pepper half. Finely chop remaining bell pepper.

To a food processor, add the ricotta, cream cheese, and garlic powder. Pulse until smooth and fully combined. Roughly crumble bacon into mixture, then add the diced bell pepper and chives and season with salt and pepper. Pulse again until just combined.

Divide and evenly spread the ricotta mixture on each wrap. Tightly roll the wraps and press down to seal. Wrap each rolled cylinder in plastic, seam-side down, and refrigerate at least 30 min. Unwrap and, using a sharp serrated knife, slice into 1-inch-thick pinwheels. Set ends aside for snacking.

Arrange to look like a Christmas tree, as desired. For example, place 1 roll-up at the bottom of a large board or platter. Add 6 roll-ups in a row above it. Arrange 5 in third row, 4 in fourth row, 3 in fifth row, 2 in sixth row, and 1 at the top. Top with bell pepper star. Place the grape tomatoes in between spaces of roll-ups as “ornaments.” Serve immediately.
