3 cups old-fashioned rolled oats

1 cup raw nuts like pecans or almonds, roughly chopped

1/2 cup seeds like sunflower or pepitas (optional)

1/2 tsp salt

1/2 cup melted coconut oil or canola oil

1/2 cup maple syrup
>
1 tsp ground cinnamon
>
1/2 tsp salt
>
2/3 cup cranberries, raisins, or other dried fruit
>
1/4 cup chocolate chips and/or coconut flakes (optional)

Preheat oven to 350°F. Line a large baking sheet with parchment. On baking sheet, add the oats, nuts, and seeds. Season with the salt, and using a spatula, mix to combine.

In a small bowl, combine the oil, maple syrup, and cinnamon, and salt. Pour oil mixture over oat mixture on sheet pan. Mix well until oats and nuts are fully coated. Using a spatula or clean hands, press mixture down into an even layer. Bake 20–25 min., stirring halfway and pressing down again. Remove from oven and top with the dried fruit and any add-ins. Let cool completely (granola will crisp up as it cools).

With hands, break granola into large pieces. Store in an airtight container at room temperature for 1–2 weeks or freeze for up to 3 months.
