Ingredients

1/2 (14 oz) package (about 1 cup) Eckrich® Cheddar Smoked Sausage Links (or any flavor), sliced

1 (12 oz) pkg bow tie pasta
>
2 tbsp olive oil
>
1 tbsp red pepper flakes
>
1 whole onion, chopped
>
1 clove garlic, chopped
>
1 (14 oz) can of Italian-style plum tomatoes
>
1/2 cup heavy cream
>
1 cup fresh spinach
>
fresh parsley
Steps

Bring a large pot of water to a boil. Cook the pasta according to package directions. Drain.

Add the olive oil then brown the sausage and red pepper flakes in a large skillet over medium heat until browned. Add onion and garlic and cook until onion is tender.

Add the tomatoes and heavy cream. Simmer until the mixture thickens, about 10 minutes.

Add the spinach and cook for an additional 3 minutes.

Add the cooked pasta to the sauce. Top with fresh parsley.
Tips
Sprinkle with parmesan, if desired.
