4 bell peppers

1 1/2 cups frozen mixed vegetables

8 large eggs

1/4 tsp smoked paprika

2 tbsp sprouts

1 tbsp Sriracha

Preheat the oven to 350°F. Cut the peppers in half. Remove the stem and seeds. Place the peppers on a baking sheet cut-sides up. Divide the frozen vegetables between the pepper halves. Top each with 1 egg. Season with salt (in moderation). Bake the eggs for 20 min., until the whites are set.

Sprinkle eggs with paprika. Top with Sriracha and garnish with sprouts.
