> 2 ripe bananas
> 1 1/2 cup quick-cooking oats
> 1/2 cup puffed rice cereal
> 1/4 cup natural peanut butter
> 1/2 cup roughly chopped Medjool dates
> 1/4 cup sunflower seeds or pepitas
> 2 tbsp dried cranberries
> 1 tsp vanilla extract
> 1/4 cup chopped pistachios (optional)
Preheat oven to 350°F. Line a baking sheet with parchment. In a large bowl, mash the bananas with a fork. Add the oats, puffed rice, peanut butter, dates, sunflower seeds, dried cranberries, vanilla, and pistachios, if using. Stir until thoroughly incorporated.
Drop rounded tablespoons of dough onto prepared baking sheet and flatten slightly. Bake 25 min., until just set. Allow to cool completely on baking sheet.
