> 2 heads broccoli
> 1 large red onion
> 1 tbsp minced garlic
> 1/2 cup prepared Italian dressing, divided
> 1/4 cup roasted salted almonds
> 1/2 cup shredded Parmesan cheese
> 1/2 cup dried cranberries
Preheat grill to medium high. Cut the broccoli into bite sized florets and thinly slice the red onion. Toss with the garlic and half of the Italian dressing. Grill broccoli and onions in a grill pan for 6-8 min each side, or until broccoli is tender and lightly charred.
Remove from grill and cool. Chop the almonds and toss with the cooked broccoli along with the Parmesan cheese, remaining Italian dressing and cranberries. Chill until serving.
