Ground Turkey and Sweet Potato Bake

This hearty casserole packed with turkey, sweet potatoes, and spinach gets a boost of flavor from paprika and Italian seasoning. Baked with a layer of mozzarella to finish, this is a weeknight meal that’s as nourishing as it is satisfying. Serve with hot sauce on the side.

Ingredients

> Cooking spray
> 2 tbsp olive oil, divided
> 1 yellow onion, chopped
> 3 cloves garlic, minced
> 1 lb 94% lean ground turkey
> 1 tsp Italian seasoning
> 2 medium sweet potatoes, peeled and diced
> 1 tsp paprika
> 1 (5 oz) pkg Nature's Promise® Baby Spinach
> 1/2 cup shredded part-skim mozzarella cheese
> 2 tbsp chopped parsley, to garnish
> Hot sauce, to serve

Preheat oven to 400°F. Coat a 2.5-quart baking dish with the cooking spray.

Heat 1 tbsp oil in a 12-inch skillet on medium. Add the onion and garlic. Cook 3–4 min., until onion is translucent, stirring occasionally. Add the turkey and season with salt, pepper, and the Italian seasoning. Cook 8–10 min., until browned, breaking up the meat with a spatula. Transfer to prepared baking dish.

Add remaining 1 tbsp oil to skillet. Add the sweet potatoes and paprika and season with salt and pepper. Cook 5–6 min., until sweet potatoes start to soften, stirring occasionally. To skillet, add the spinach in batches and stir until wilted. Remove from heat and return turkey mixture to skillet, tossing to combine.

Transfer mixture back to baking dish and spread in an even layer. Top with the cheese. Bake 20–25 min., until sweet potatoes are tender and cheese is melted. Remove from oven and garnish with the parsley and serve with hot sauce, if desired.
