Guinness French Onion Soup

Add an Irish twist to this classic comfort soup.

Ingredients

> 4 tbsp butter
> 4 lbs sliced onions
> 2 cloves chopped garlic
> 1 tsp chopped thyme
> 1/4 cup flour
> 3 cups Guinness beer
> 3 cups beef broth
> 2 tsp Worcestershire sauce
> 1 tbsp grainy mustard
> 2 bay leaves
> salt and pepper to taste
> 4 slices, 1/2-inch thick of toasted day old bread
> 1 cup shredded white cheddar cheese

Steps

Melt 2 Tbsp. butter in a pan. Add 4 lbs. onions and cook until caramelized. Deglaze pan with Guinness every 10-15 mins.

Add 2 cloves garlic, 1 tsp. thyme, and 2 Tbsp. butter. Mix in ¼ cup flour and cook 3-5 mins.

Deglaze pan with more Guinness and add 3 cups broth, 2 tsp Worcestershire sauce, 1 Tbsp. grainy mustard, and 2 bay leaves. Simmer for 30 mins.

Ladle soup into bowls and top with sliced bread and cheese.

Comments

You can also use vegetable broth instead of beef broth.
