Ingredients

1 lb package Penne Pasta (or tubed pasta of your choice)

1/2 cup Picnic Herbed Goat Cheese
>
1/2 cup Crispy Prosciutto
>
1/2 cup crushed Pistachios
>
2 tbsp Italian Parsley (thinly sliced)
>
Olive oil
>
Sea salt
Steps

Pre-heat oven to 350.

Cook pasta to al dente. Reserving about a half a cup of pasta water.

While pasta is cooking tear up prosciutto into bite size pieces

Place prosciutto on baking tray. and cook in 350 oven for about 5-10 minutes until crispy. (Keep an eye on it so you do not over cook.)

Crush pistachios, just a bit. I put them on a cutting board, cover with a paper towel and hit gently with the flat side of a meat tenderizer.

Pour hot pasta into serving dish and mix in Picnic’s Herb Goat Cheese. Stir to coat and drizzle with olive oil, then salt to taste.

Top with crispy prosciutto, crushed pistachios, & parsley.
