Home Fries with Eggs and Bell Pepper

Breakfast for dinner is always a winner. Potatoes, eggs and fresh diced veggies mingle in this single-pan breakfast that is just as satisfying at dinnertime.

Ingredients

> 1 small red onion
> 1 red bell pepper
> 2 tbsp butter
> 1 (1.4 lb pkg) Simply Potatoes® diced potatoes with onion
> 4 large eggs

Halve the onion and thinly slice. Cut the pepper into small strips.

Melt the butter in a large skillet over medium heat and fry the onion and pepper for 5 min., or until softened. Increase heat to medium-high; add potatoes and cook 12 min., stirring frequently.

Using a spatula or spoon, make 4 indents in the potato mixture. Break one egg into each indent. Put the lid on the pan. Cook on low for about 8 min., until the egg whites are set and the yolk is to desired doneness. Sprinkle with salt and pepper.
