Individual Peach Clafoutis

This much beloved French dessert falls somewhere between a custard and a puffed pancake. Bursting with juicy summer peaches and sprinkled with sugar, it's the perfect end to a simple meal. Prepare in individual ramekins, or in one large dish to serve family-style.

Ingredients

> 2 cups diced peaches (about 1 lb)
> 1/2 cup nonfat milk
> 1/4 cup Eggs Made Simple egg product or 1 egg
> 2 tbsp all-purpose flour
> 1 tbsp sugar
> 1/4 tsp vanilla extract
> 1/8 tsp grated nutmeg
> 2 tbsp sliced natural almonds
> confectioners' sugar (optional)

Preheat oven to 375°F. Grease 4 individual ramekins or custard cups (6-ounces each) and place on a baking sheet. If you do not have individual cups, use a 1-quart baking dish. Divide the peaches among the cups. Whisk together milk, egg product, flour, sugar, vanilla and nutmeg until well combined. Pour mixture over peaches and top with sliced almonds. Bake until puffed and golden, about 20 minutes for ramekins or 30 minutes for baking dish. Cool to lukewarm.

Sprinkle with confectioners' sugar if desired.
