Latke Waffles with Smoked Salmon

These waffles can be elegant served with salmon and crème fraîche, or comforting with a fried egg on top.

Ingredients

> 1/2 (4 oz) pkg smoked salmon
> 1/4 cup creme fraiche or sour cream
> 1 lb russet potatoes
> 1/2 yellow onion
> 1/2 tbsp lemon juice
> 1/4 cup flour
> 1/2 tsp baking powder
> 1/4 tsp salt
> 2 large eggs
> 1/2 bunch chives
> cooking spray
> Cheesecloth

Peel potatoes and remove skin from onion. Use a box grater or the medium shredder attachment of a food processor to coarsely grate potatoes and onion. Transfer vegetables to a mesh strainer lined with cheesecloth. Gather up the edges of the cheesecloth, then twist and squeeze to release as much moisture from the vegetables as possible. Empty into a large bowl and toss with lemon juice.

Mix dry ingredients together in a small bowl and beat eggs into the mixture. Toss egg batter with grated vegetables until fully coated. Season with salt and pepper. Meanwhile prepare waffle iron with cooking spray according to machine directions.

Evenly spoon half of the latke mixture into a hot waffle iron and cook for about 9 min., or until golden brown. Chop the chives. Serve with crème fraiche, smoked salmon, and chives.
