Mango Ginger Glazed Ham

When pineapples are scarce, there's another tropical fruit to pair with ham: juicy mangoes. This dish is a slight variation on the Hawaiian classic. Half of the sauce is puréed in a blender, while the other half is left as is, for texture. The ginger in this recipe adds a pungent heat that will liven up your Sunday dinner.

Ingredients

> 2 ripe mangos, peeled, pitted and cubed
> 1/4 cup honey
> 2 tbsp fresh lemon juice
> 2 tbsp finely chopped onion
> 1 tsp grated fresh ginger root
> 1/4 tsp ground cinnamon
> 1/4 tsp ground allspice
> 3 lb boneless lower-sodium ham

Preheat oven to 350°F. In a medium bowl, combine mango chunks, honey, lemon juice, onion, ginger, cinnamon and allspice. Place half of the mango mixture in a blender or food processor and puree until smooth. Reserve remaining mango chunk mixture.

Score the surface of the ham in a diamond pattern with a sharp knife and place in a shallow baking dish. Brush ham with some of the mango puree and pour remaining puree in the baking dish around the ham. Bake for 1 hour, basting with glaze frequently. Slice ham and serve with remaining mango chunk mixture.
