Miso-Rubbed Turkey with Gravy

A quick, three-ingredient miso-maple butter gives the classic holiday roast turkey a big flavor boost. Adding the turkey drippings to jarred gravy makes an easy, fuss-free sauce.

Ingredients

> 1 (12- 14 lb) Nature's Promise ® Fresh Young Turkey, thawed if frozen
> 1/2 cup (1 stick) unsalted butter, softened
> 1/4 cup white miso
> 3 tbsp maple syrup
> 1 (12 oz) jar homestyle turkey gravy

Preheat oven to 400°F. Remove the neck and giblets from the body cavity of the turkey and pat turkey dry with paper towels. Set a roasting rack in a large roasting pan and place turkey on rack, breast-side up. Generously season all over, including cavity, with salt and pepper.

In a medium bowl, combine the butter, miso, and maple syrup. Tie turkey legs together with kitchen twine and tuck wing tips back. Starting from neck opening, gently loosen skin on turkey. Evenly spread half of butter mixture under skin. Rub remaining butter mixture all over turkey.

Add 4 cups water to bottom of roasting pan. Roast turkey 30 min. Reduce oven temperature to 325°F. Roast 1 hour 45 min. to 2 hours 30 min. more (depending on the size of your turkey), until an instant-read thermometer inserted into a thigh reads 165°F. After 1 hour, loosely cover breast with foil and add more water if pan seems dry. Let roasted turkey rest 20–30 min.

While turkey rests, using a fine-mesh sieve, strain off any drippings from pan into a medium pot. Add the gravy to pot and heat on medium 1–2 min., until warmed and bubbling. Carve turkey and serve with gravy.

Tips

For some extra flavor, stuff the turkey cavity with orange slices and fresh rosemary before roasting.
