Mushroom and Goat Cheese Quesadillas

Herb goat cheese and sautéed mushrooms put a gourmet spin on this easy classic.

> Cooking spray
> 2 (8 oz) pkgs sliced white mushrooms
> 1 cup salsa
> 8 8-inch flour tortillas
> 1 (4 oz) pkg garlic and herb goat cheese


Preheat oven to 450°F. Spray a large baking sheet and 12-inch skillet with cooking spray.
In greased skillet, cook the mushrooms on medium-high 5 min. Season with salt and pepper. Stir in ½ cup salsa. Cook 2 min., until mushrooms are tender, stirring often.
Place 4 tortillas on greased baking sheet. Divide mushroom mixture among tortillas and crumble goat cheese on top. Place remaining tortillas on top and spray with cooking spray. Bake 8–10 min., until tortillas are golden brown and crispy. Cut into wedges and serve with remaining ½ cup salsa.
