> 1 cup shelled pistachios, plus extra for topping
> 1 cup rolled oats
> 1/2 tsp sea salt
> 1/4 cup maple syrup, plus extra for drizzling
> 2 tbsp olive oil
> 1/3 cup unsweetened coconut flakes
Preheat oven to 350° F, and line an 8x8 baking pan with parchment paper.
Combine pistachios, oats, and salt in food processor, and blend until combined (about 30 seconds).
Add maple syrup and olive oil, and blend until mixture forms a crumbly, slightly wet dough.
Firmly press the dough into the pan until even, and top with coconut flakes and extra pistachios.
Bake 10-12 minutes until coconut flakes are golden brown.
Remove from oven, and let cool.
Drizzle with extra maple syrup if desired, and cut into squares.
