Plum Delicious Kabobs

These dessert kabobs live up to their name: the combination of pound cake, grilled summer stone fruit and apricot preserves certainly is plum delicious. This is a great last-minute dessert to make when grilling, as the dish can be assembled outside.

> 1/2 cup apricot preserves
> 1 tbsp butter
> 1/8 tsp ground cinnamon
> 1/8 tsp grated nutmeg
> 3 3 firm nectarines, pitted and quartered
> 3 3 firm plums, pitted and quartered
> 3 3 firm peaches, pitted and quartered
> 1 pound cake, cut into cubes
> 6 metal or wooden skewers *


For the glaze, in a small saucepan over medium heat combine preserves, butter, cinnamon, nutmeg and 1 tablespoon water; cook and stir just until butter melts. Set aside.
Preheat grill to medium (300°F-350°F). Thread fruit and cake alternately on 12-inch skewers. Brush with glaze.
Place skewers on grill 5 inches from heat. Grill 7 minutes, turning once. Brush with glaze. Serve skewers with remaining glaze.


*If using wooden skewers, soak at least 30 minutes before grilling to prevent burning.
