Pork Chops Smothered in Mushroom Gravy

A comforting classic, these pork chops are coated in a sauce that gets its satisfying richness from meaty mushrooms and sour cream.

Ingredients

> 4 boneless pork chops
> 2 tbsp olive oil, divided
> 1 (8 oz) pkg Nature's Promise Organic sliced White Mushrooms
> 1 (8 oz) pkg sliced baby bella mushrooms
> 1 tbsp minced garlic
> 2 tbsp flour
> 1 cup low-sodium chicken broth
> 1/2 cup reduced-fat sour cream
> 1 (0.75 oz) pkg chives

Season the pork with salt and pepper. In a large skillet, heat 1 tbsp oil on medium-high. Add pork and cook 2 min. per side, until golden brown. Transfer to a plate and cover loosely with foil.

In the same skillet, heat remaining tablespoon oil on medium-high. Add the mushrooms and cook 5 min., until golden, stirring occasionally. Add the garlic and flour and cook 1 min., stirring. Add the chicken broth and cook 2 min., until slightly thickened, stirring to scrape up bits from pan. Season with salt and pepper.

Stir in the sour cream and add pork chops back to the pan. Simmer 5 min., until an instant-read thermometer inserted into the pork chops reaches 145°F. Chop the chives. Garnish pork with chives.
