Roasted Parmesan Potatoes

Creamy red-skinned potatoes need only a little coaxing from garlic and Parmesan cheese to become your new favorite side dish. Simple to prepare, these will satisfy cravings for baked potatoes and French fries alike, in less time it takes to make either.

> 2 lb red potatoes (about 8 3-inch potatoes)
> 1 tbsp olive oil
> 1/4 tsp ground black pepper
> 1/2 tsp crushed garlic
> 1/4 cup grated Parmesan cheese


Preheat oven to 425°F. Coat a baking sheet with cooking spray or oil. Cut potatoes in half lengthwise, then slice each half into 4 wedges. In a large bowl, combine potatoes, oil, pepper, garlic and Parmesan; toss to coat evenly. Arrange potatoes in a single layer on baking sheet. Bake for 20 minutes or until golden brown. Serve immediately.
