Romaine Apple and Cheddar Salad with Maple Vinaigrette

Ingredients

> 3 romaine hearts, chopped
> 1 large Gala apple, thinly sliced
> 4 oz aged block cheddar cheese , cut into small cubes
> 1/4 cup pepitas (pumpkin seeds)
> 1/2 small red onion, very thinly sliced

For the Maple Vinaigrette:

> 2 tbsp maple syrup
> 2 tbsp apple cider vinegar
> 1 tbsp coarse mustard
> 1/4 tsp cinnamon
> 1/8 tsp cayenne
> 2 tbsp olive oil

Cut all salad ingredients and place in a large bowl.

Whisk together the maple syrup, mustard, cinnamon and cayenne in a small bowl until smooth. Drizzle the olive oil into the bowl while whisking to incorporate.

Toss dressing with salad right before serving.
