Ingredients

1 tbsp olive oil

1 tbsp butter

1 lb 10-20 count sea scallops

1 tsp kosher salt

1/2 tsp black pepper
>
1 mango, peeled and chopped
>
1/4 cup thinly sliced scallions
>
1/2 avocado, chopped
>
1 tbsp lime juice

Preheat a large nonstick skillet over medium high heat.

Pat scallops dry with a paper towel. Season with salt and pepper on both sides. Add the oil and butter to the pan. Once butter is melted and bubby add the scallops. Cook for 4-5 minutes or until golden brown. Flip and cook for an additional 2-3 minutes.

Meanwhile mix together the chopped mango, avocado, scallion, salt and lime juice in a bowl until well blended.

Remove scallops from pan. Top each scallop with a small spoonful of the salsa. Serve with steamed rice or your favorite starch and enjoy!
