Shortcut Potato Soup

Thanks to store-bought mashed potatoes and fully cooked bacon, the classic-comfort potato soup can be ready in 20 minutes. Load up your bowl with all the fixings.

Ingredients

> 1 (2.1 oz) pkg Nature's Promise® Fully Cooked Bacon
> 2 tbsp butter
> 3 tbsp all-purpose flour
> 2 cups low-sodium chicken broth, plus more as needed
> 2 cups whole milk
> 1 (24 oz) pkg Nature's Promise® Yukon Gold Mashed Potatoes or 3 cups leftover mashed potatoes
> 1 tsp dehydrated minced onion
> 1 cup finely shredded Cheddar jack cheese, divided
> 1/2 cup light sour cream, to garnish
> 1/2 cup sliced green onions, to garnish

Microwave the bacon according to package directions. In a medium Dutch oven, melt the butter on medium-high. Sprinkle the flour over butter and cook 30 sec.–1 min., until mixture is lightly golden, whisking constantly.

Slowly whisk the broth and milk into flour-butter mixture. Bring mixture to a simmer and cook until soup thickens, whisking occasionally. Stir in the mashed potatoes, whisking thoroughly to remove any lumps. Season with salt and pepper. Stir in the dehydrated onion and ½ cup cheese.

Meanwhile, crumble bacon into small pieces. Remove soup from heat. If soup is too thick, add ¼ cup chicken broth or water to thin to desired consistency. Divide soup among 4 bowls. Garnish with bacon, remaining cheese, sour cream, and green onions.
