Skillet Chicken with Apples and Spinach

Cooking chicken in bacon fat adds extra flavor while apples add a touch of sweetness to this fall dinner. Pre-cooked brown rice is a simple finishing touch.

Ingredients

> 6 slices bacon, chopped
> 4 boneless, skinless chicken breasts
> 3 tbsp Dijon mustard
> 2 red apples, cut into 1/4"-thick slices
> 5 cups baby spinach
> 1 (8.8 oz) pkg microwave-in-the-bag brown rice

Preheat oven to 375°F. Heat a 12” ovenproof skillet over medium. Add the bacon and cook until crispy, 10 minutes. Remove bacon with a slotted spoon and transfer to a paper towel-lined plate, leaving the bacon fat in pan.

Season chicken with salt and pepper and add to skillet. Sear until golden brown, 3 to 4 minutes per side. Transfer to plate and set aside.

To skillet, add mustard and ½ cup water. Stir to combine and deglaze pan, scraping up any browned bits. Add apple slices and stir to coat. Nestle the chicken on top. Cover and bake 15 minutes, then uncover and continue cooking 5 to 10 minutes, until chicken reaches internal temperature of 165°F.

Remove skillet from oven and add bacon and spinach. Bake until spinach is wilted, 5 minutes. Microwave brown rice according to package directions and serve with chicken, apples and spinach.
