Slow Cooker Braised Green Beans

Take a break from the hot grill and let your slow cooker do the work. Fresh green beans get braised in a tomato broth for a healthy and flavorful side dish.

> 1 medium onion
> 3 cloves garlic
> 3 tbsp olive oil
> 1 1/2 lbs fresh green beans
> 3 plum tomatoes
> 1 tbsp red wine vinegar


Thinly slice the onion and garlic. In a 12-inch skillet, heat the oil on medium-high. Add onion and garlic. Cook 3–5 min., until golden brown, stirring often.
Meanwhile, trim the green beans and chop the tomatoes. Add both to slow cooker, along with onion mixture. Season with salt. Cover and cook on low 4–5 hours, until green beans are very tender. Stir in the vinegar.
