Slow-Roasted Salmon with Citrus and Herbs

Perfectly cooked salmon for a crowd is easy with this foolproof recipe (did we mention it also looks beautiful?). Fresh citrus and herbs make this main taste as bright as it looks.

Ingredients

> 1- 2 lemons
> 1 medium orange
> 1 (0.5 oz) pkg Nature's Promise® Organic Italian Parsley
> 1 (0.5 oz) pkg Nature's Promise® Dill
> 1 (2 1/2- 3 lb) salmon fillet
> 1/4 cup olive oil

Preheat oven to 275°F. Line a baking sheet with parchment. Zest the lemons and orange into a small bowl; set aside. Thinly slice fruit. Remove the leaves and fronds from the parsley and dill and set aside, reserving stems.

Rub the salmon all over with the oil and season both sides with salt and pepper. Place half of the reserved herb stems, lemon slices, and orange slices on the baking sheet. Place salmon on top. Top with remaining herb stems, lemon slices, and orange slices.

Roast salmon 35–40 min., until fish flakes easily with a fork or when it reaches 120°F on an instant-read thermometer. When salmon is almost done, roughly chop dill and parsley leaves. Add to bowl with zest and toss to combine. Carefully transfer salmon to large serving platter. Scatter herb mixture over salmon.
