1 cup diced red onion

3/4 cup sugar

1 cup red wine vinegar

1 (8 oz) pkg smoked trout

1 (10 oz) box matzos

2 lemons

Place the onion, sugar, and vinegar in a pot and bring to a boil. Reduce to a simmer and cook until liquid slightly reduced, 10 min. Drain excess liquid from relish.

Meanwhile, use a fork to shred smoked trout into a bowl. Carefully break matzos into smaller crackers (about 6 pieces per matzo). Arrange crackers on a large plate. Slice lemon into small wedges and chop the dill.

Place a spoonful of trout on each matzo cracker and top with onion relish, chopped dill, and a slice of lemon.
