Smoked Trout on Matzo with Red Onion Relish

Smoked trout combines with red onion, tart lemon, and dill to top off matzo in this easy and delectable appetizer.

Ingredients

> 1 cup diced red onion
> 3/4 cup sugar
> 1 cup red wine vinegar
> 1 (8 oz) pkg smoked trout
> 1 (10 oz) box matzos
> 2 lemons
> 1/2 cup dill

Place the onion, sugar, and vinegar in a pot and bring to a boil. Reduce to a simmer and cook until liquid slightly reduced, 10 min. Drain excess liquid from relish.

Meanwhile, use a fork to shred smoked trout into a bowl. Carefully break matzos into smaller crackers (about 6 pieces per matzo). Arrange crackers on a large plate. Slice lemon into small wedges and chop the dill.

Place a spoonful of trout on each matzo cracker and top with onion relish, chopped dill, and a slice of lemon.
