2 (6.5 oz) jars sliced pimientos

2 cups shredded extra sharp cheddar (about 8 oz)

1/4 tsp ground cayenne

1 tsp lemon juice

3 tbsp light mayonnaise

1/4 cup grated Parmesan cheese

1/2 (8 oz) pkg cream cheese, softened

16 slices white country bread

Drain and chop the pimientos. In a medium bowl, stir together the pimientos, Cheddar, cayenne, lemon juice, mayonnaise, and Parmesan. Fold in the cream cheese. Season with salt and pepper. Mix until well combined.

Cut the crusts off the bread. Spread pimiento cheese evenly over 8 slices of bread. Top with remaining slices of bread. Cut sandwiches into bite-size rectangles.
