Squash and Sausage Kabobs

These easy skewers feature zucchini, yellow squash, and slices of smoked sausage brushed with a zesty seasoned oil and grilled until tender and charred. They’re a great low-lift dish for summer entertaining or a quick weeknight meal.

Ingredients

> 2 small zucchini
> 2 small yellow summer squash
> 1 (14 oz) pkg smoked turkey sausage rope
> 8 (8-inch) metal skewers or soaked wooden skewers
> 1 pint grape tomatoes
> 1 lemon
> 1/4 cup olive oil
> 1 tbsp Italian seasoning
> 1 tsp garlic powder

Set grill to medium and grease the grill grates. Trim the zucchini and summer squash. Then cut each squash on a bias into ½-inch rounds. Cut the sausage into 1-inch-thick slices.

Thread each skewer with zucchini, tomato, sausage, summer squash, and another tomato in alternating pattern, repeating layering twice.

Into a small bowl, grate 1 tsp zest and squeeze 2 tbsp juice from the lemon. Add the oil, Italian seasoning, and garlic powder and whisk to combine. Season well with salt and pepper. Brush kabobs with half of the oil mixture.

Place skewers on grill. Grill 13–15 min., until charred in spots and vegetables are tender, turning and brushing occasionally with remaining oil mixture. Transfer to platter and let cool slightly. Brush with any remaining oil mixture before serving.
