Steamed Salmon with Dill Rice

This quick 5-ingredient salmon and rice recipe is finished with a dollop of flavorful lemon-dill sour cream.

> 1 lemon
> 4 salmon fillets (about 4 oz each)
> 2 (8.8 oz) pkgs Nature's Promise ® Precooked Jasmine Rice
> 1 (1/2 oz) pkg Nature's Promise ® Organic Dill
> 1/3 cup light sour cream


Fill a large pot halfway with water. Salt the water and set a steamer basket inside pot. Bring water to a boil on high. Zest half the lemon into a small bowl and set aside. Cut lemon into slices. Pat the fish dry with paper towels and season with salt and pepper. Add fish to steamer basket and top with lemon slices. Reduce heat to medium. Cover pot and cook 6–8 min.
Meanwhile, microwave the rice according to package directions. Transfer to a medium bowl. Finely chop the dill. Add 1 tbsp chopped dill to bowl of lemon zest and stir to combine. Reserve 1 tbsp chopped dill for garnish. Stir remaining dill into bowl of rice.
Stir the sour cream into bowl of lemon zest and dill. Season with salt and pepper. Remove fish from steamer basket and discard lemon slices. Top dill rice with fish and a dollop of sour cream. Garnish with reserved dill.
