Stuffed Mushrooms

Using stuffing mix for these mushrooms makes for a crowd pleasing appetizer. Freeze the mushroom stems and use them later to flavor soups and broths.

> 1 cup stuffing mix
> 1/2 cup water
> 2 (8 oz) pkgs Nature's Promise® Organic Whole White Mushroom
> 2 tbsp olive oil
> 1/4 cup grated Parmesan 
> 1 (0.75 oz) pkg chives


Preheat the oven to 400°F. Prepare the stuffing mix according to package directions. Gently pull the stem from each mushroom. Place mushrooms, cavity sides up, on a parchment-lined baking sheet.
Drizzle mushrooms with olive oil and season with salt (in moderation) and pepper. Spoon stuffing into mushroom cavities. Top with the Parmesan and bake 20 min., until filling is golden brown. Chop the chives and sprinkle over mushrooms.


This is also a great way to use up any leftover stuffing post-Thanksgiving!
