1 bag (8 oz) Success® Brown Rice

1 tbsp olive oil

4 boneless, skinless chicken breasts

24 frozen small pearl onions, thawed

1 large cucumber, diced
>
1/4 cup chicken broth
>
3 tbsp chopped fresh basil leaves, divided
>
1 tbsp chopped parsley
>
4 lime wedges

Prepare rice according to package directions.

Meanwhile, heat oil in a large skillet over medium-high heat. Brown chicken for 5-6 minutes per side. Add onions, cucumber and broth. Simmer on low for 10 minutes, until chicken reaches an internal temperature of 165°F and onions are cooked through.

Stir in 2 tablespoons of basil and parsley. Serve chicken mixture over rice. Garnish with fresh lime wedges and additional basil.
