Sweet Potato Smash with Honey Caramelized Onions, Bacon, Walnuts & Gruyere

Ingredients

> 2 large sweet potatoes
> 2 tbsp olive oil
> 1 onion, halved and thinly sliced
> 1 tsp kosher salt
> 1 tsp freshly ground pepper
> 1 tbsp balsamic vinegar
> 1 1/2 tbsp honey
> 4 slices bacon, cooked crisp and cut into 1/2" pieces
> 1/2 cup shredded Gruyère 
> 3 tbsp toasted walnuts, roughly chopped

Preheat oven to 375ºF.

Oil potatoes and pierce with a fork down the center, place on a sheet pan and bake for 45-55 minutes or until tender when pierced with a fork.

While the potatoes are baking, make the onions. Heat the olive oil in a skillet over medium heat and add the onions, salt and pepper. Cook for about 8 minutes, add the balsamic vinegar and honey, reduce the heat to low and cook for an additional 10-15 minutes or until onions are completely translucent and caramelized.

Cut an “X” in the top of the potatoes and push in the sides to open up the potato, top each with half of the cheese, caramelized onions, bacon and walnuts. Serve immediately.

Tips

This recipe would be equally good with a regular baked potato!
